HOMEMADE CARROT MURABBA

Ingredients – Carrots – 1 kg, Sugar – 700g, Lemons -2.

Method РPeel and wash the carrots thoroughly. Cut these carrots into 2 inch pieces. Boil 6 cups water in a vessel and drop the carrots into boiling water. As soon as water starts boiling again, switch off the gas and cover the vessel with a lid for 5 minutes. 

Now, take out the carrots onto a clean towel and wipe them dry. Next, make small marks on the carrots with the help of a fork,so that they become juicy from  inside too.

Take a heavy bottomed vessel and transfer all the carrots into it. Now pour down the sugar over the carrots in such a way that all carrots are covered with sugar. Keep this covered overnight or for atleast 7- 8 hours.

After 7 – 8 hours, put the vessel on the flame and let the mixture boil for atleast 20 minutes. Switch off the flame and let it cool completely.Add in juice of 2 lemons. Check the sugar syrup. It should be one string sugar syrup,otherwise, put it on the flame once again till it resembles honey.When done, let it cool down completely and transfer the contents into an air tight and sterelized container.
