HEALTHY AND LIGHT BREAKFAST RECIPE

Ingredients – Suji – 1 cup, Curd – 1 cup, Carrots(finely chopped) – 1\2 cup, Cauliflower(chopped) – 1\2 cup, Capsicum(finely chopped) – 1\4 cup, Peas – 1\2 cup,Green chillies(finely chopped) – 1\2 tsp, Ginger(finely grated) -1tsp, Oil – 2 tbsp, Curry leaves – 5 – 6, Mustard seeds(sarson) – 1\2 tsp, Chana dal – 1tsp, Urad dal – 1tsp, Salt – as per taste, Baking powder – 1 levelled tsp.

Method – First of all, in a mixing bowl, mix suji and curd really well. Next, add in carrots, cauliflower,capsicum, peas, green chillies, salt and grated ginger. Mix well.

                 Now heat a small pan, pour in a little oil and add mustard seeds into it . Also add in curry leaves,chana dal and urad dal.When the dals are slightly brown, pour this mixture into the prepared suji mixture and mix nicely. Keep this batter at rest for about 15 minutes.

After 15 minutes, add the baking powder into the prepared mixture and mix lightly. Preheat the Appam maker for 2 minutes. Now, apply a little oil with a brush on the appam moulds and fill the moulds with the suji batter. Cover with its lid and cook for about 2 – 3 minutes on slow flame.After 2 -3 minutes,pour a drop of oil on each appam and flip the side. Cook covered for 2 – 3 minutes again till these are golden brown from all sides.

Your healthy breakfast is ready. Serve steaming hot appams paired with mint or coconut chutney. Enjoy to your heart’s content!!
